St Davids Day Beef Cawl

Ingredients

  • 1lb Diced Ceredigion Beef
  • 1 sliced onion
  • 1 sliced leek
  • 2 sliced carrots
  • half small swede, chopped
  • 3 potatoes chopped
  • 3/4 pint water
  • salt and pepper to season

Method

  • Lightly brown the diced beef and onion in a large saucepan
  • Add remaining ingredients and bring to the boil
  • Cover with lid and cook for 1 and 1/2 hours
  • Serve in bowls with crusty bread and chunks of welsh cheese
  • Garnish with sprig or chopped parsley
